Tai Ping Hou Kui is one of China’s most renowned green teas and is produced in the area around Hou Keng in Anhui Province. The tea bushes grow at an altitude of around 800 metres in the mountainous landscape, and production of high-grade Tai Ping Hou Kui is limited.

The tea is produced from the large-leaf Shi Da Ye cultivar, which is closely associated with the area and particularly well suited to Tai Ping Hou Kui’s characteristic, exceptionally large leaves. During plucking, a shoot with a bud and three young leaves is selected. The third leaf is then removed, leaving one bud and two leaves.

After heating to halt oxidation, the leaves are gently shaped and pressed beneath cloth. This gives Tai Ping Hou Kui its distinctive flat appearance and the fine mesh-like pattern visible on the dried leaves. The finished leaves are exceptionally large and make the tea easy to recognise among Chinese green teas.

The tea has a distinctly floral aroma and a mild, well-balanced flavour with natural sweetness, little bitterness and a light green note.

Tai Ping Hou Kui can be prepared directly in a tall glass, which also makes it possible to watch the large leaves gradually unfurl in the water. First pour a small amount of hot water over the leaves and allow them to open. Then add more water and steep for around two minutes. More water can be added gradually, and the same leaves can be infused several times.
