Pu-erh tea benefits from storage and gives the tea a smoother, milder taste, the acidity in the taste diminishes with age. The very special taste of black Pu-Erh is obtained by undergoing a special process to speed up tea oxidation to get similar features as aged Pu-Erh tea has.
