This high-quality matcha comes from Yame in Fukuoka Prefecture, one of Japan’s best-known regions for green tea, with a tea-growing tradition spanning around 600 years. The matcha is a carefully composed blend of the Yabukita, Saemidori, Okumidori and Tsuyuhikari cultivars. By combining the qualities of these different cultivars, the producer has created a full-bodied and well-balanced matcha with rich umami, mild sweetness and a smooth, distinctly nutty character. Ceremonial grade.

To prepare matcha, use a bamboo matcha whisk and a bowl. Whisk the matcha with water, adjusting the proportions to suit your preference. The powder does not dissolve in the water, as it consists of finely ground tea leaves.

Before harvest, the tea bushes are shaded to reduce their exposure to sunlight. This increases the level of free amino acids in the leaves, particularly theanine, and contributes to the matcha’s rich umami. After harvest, the leaves are processed into tencha and ground into a fine, intensely green powder.

The custom of using powdered tea in the tea ceremony originated in China, as did tea drinking itself. The Japanese continued to develop their tea ceremony into the form practised today, while loose-leaf tea eventually became predominant in China.

Matcha is a powder made from high-quality, stone-ground Japanese green tea. It is traditionally used in the Japanese tea ceremony, but is now also commonly enjoyed as a health drink and used to add flavour to a variety of dishes and baked goods.
