Oolong tea is a tea where a certain oxidation occurs and is interrupted before the tea has become black tea. The teas oxidation levels can range from 10 to 80% and from green to brown. There is a big variation in the taste. In Wu Yi, China, the teas are usually dark and roasted, Dancong oolong teas are often light oxidized with complex aromatic flavors and in Taiwan, oolong teas are light oxidized with light flavors.
