The cultivar used for the production of the tea is called Shi Da Ye, a broadleaf cultivar specific for Anhui province that is not used for any other teas. The tea is picked by hand in the form of a top with three young leaves, then the third leaf is discarded. The tea leaves are pressed by hand by a piece of cloth, this process gives the cross pattern as seen on the dried tea leaves. The dried tea leaves are exceptionally large.
